Where they come from
Coffee is a roasted seed. The plant, Coffea arabica, is native to the Ethiopian highlands and travelled out of Arabia through the early modern period. Yerba mate (Ilex paraguariensis) is a leaf, native to the subtropical forests of north-eastern Argentina, southern Brazil, Paraguay and Uruguay. It was first prepared as a beverage by the Guaraní people; from the seventeenth century onwards Jesuit missionaries in the region cultivated and traded it more widely, which is how mate eventually travelled . The daily round of the shared gourd remains a fixture of South American social life today.
What’s actually in the cup
Both drinks are sources of caffeine, but their chemistry is not identical. Mate is rich in three methylxanthines — caffeine, theobromine and a trace of theophylline — plus a high load of polyphenols, especially chlorogenic acid and its caffeoylquinic isomers (Heck & de Mejia, 2007). Coffee is dominated by caffeine and the chlorogenic acid family, which roasting partially breaks down.
The polyphenol content of a mate infusion is high. Analytical work on twenty-six commercial mate samples has reported caffeine intakes between roughly 172 and 342 mg per serving with caffeoylquinic acids between 803 and 1,404 mg, depending on product and preparation — a CGA-to-caffeine ratio comparable to a lightly roasted coffee . In plainer terms: for the amount of caffeine you get, you’re also getting a meaningful dose of plant antioxidants.
Caffeine, side by side
A standard espresso contains roughly 60 to 80 mg of caffeine. A 150 ml cup of yerba mate is in a similar range — around 80 mg (National Institutes of Health, 2024; Heck & de Mejia, 2007). What matters for your day is not just the dose but the curve. Does mate really feel different from coffee?
Many regular drinkers report that mate gives a smoother, more sustained lift than coffee, with less jitteriness. The plausible mechanism is the second methylxanthine, theobromine, which is a milder stimulant of the central nervous system than caffeine and has a different cardiovascular profile — it dilates blood vessels rather than constricting them limited human trials. The trace of theophylline adds to the picture. But: robust head-to-head pharmacokinetic comparisons in humans are limited. Treat the “smoother lift” as a widely reported practical observation rather than a settled clinical finding.
What we can say with more confidence: at the same caffeine dose, a drink with a higher polyphenol-to-caffeine ratio (which describes mate well) is delivering a different overall pharmacology than one without. Whether that translates into a noticeably different subjective feel is, to date, more anecdote than trial.
The flavour difference
Coffee is roasted: that is the dominant flavour. Depending on the bean and the roast, it can be bright and fruity, dark and chocolatey, or anywhere between. Mate is green and herbaceous, with a slightly smoky edge — partly from the traditional drying over wood smoke — and a mineral, grassy finish. It is much closer in profile to a strong green tea than to a coffee.
A practical note on temperature
The International Agency for Research on Cancer classifies the drinking of very hot beverages — above about 65°C — as probably carcinogenic to humans (Group 2A), based largely on epidemiology around mate drunk near boiling in parts of South America . The IARC was explicit that the risk relates to temperature, not to mate itself.

How to brew yerba mate well
Three principles will get you most of the way. First: never boiling water. 70 to 90°C is the range that extracts the leaf’s flavour and stimulants without scorching them or pushing you above the IARC temperature threshold . Second: give it time. A five-minute steep is the floor for pyramid-bag mate; loose leaf in a gourd is traditionally refilled many times over a longer sitting. Third: drink it warm, not hot. The cup should be comfortable on the lip.

Choosing between them
